There are real logics problems to replace a candidate on state ballots between when the convention and the election. As it is, Democrats have to meet before the convention to complete the nomination to meet the deadline in Ohio.

State laws may not allow a change on short notice. Printing new ballots takes time. Early voting and vote by mail means that some people may have already voted or received old ballots.
If some states change and other do not, then there is a good chance that no one gets a majority in the electoral college.
If Biden is replaced it will almost certainly happen before August 7.
