Why do the demographics matter when are talking about raw numbers of crime? Is murder worse when it’s a black person or white person?

I don’t know because I can’t calculate probability in your scenario. If there are only 1000 people in your first room and they are all raping then I have a 100% chance of being raped if I walk in.
