I’m guessing you won’t like them no matter what.
That said, treat them like cabbage or collard greens.
Quarter them and Stir fry them.
and/or serve them with ham or any cured meat
or halve them and boil them up with potatoes and corned beef and make jokes about them being small cabbage for the leprechauns
