County officials say it’s unlikely their symbolic move will be enough to stop the state legislators from passing new gun control measures as the legislature is dominated by lawmakers from in and around Chicago
I think even if the state pass gun control laws the county should ignore the state and force the state to take em to court. Force it into SCOTUS hands. IMO.

Counties fall under state jurisdiction but then if we’re going to claim cities and states are no longer subject to the Supremacy clause the same can be argued by cities and counties with respect to state laws.

Supremacy Clause has nothing to do with sanctuary cities and states. Federal law on immigration is still in effect in those cities and states. However, they cannot commandeer local law enforcement to enforce federal law.
The authorities of county government arise from state law. For example counties in Connecticut and Rhode Island are not even governmental jurisdictions.
