Yup iron, (in a lot of stuff, not just beef) gives that stuff a purplish-reddish color.

As it oxidizes it turns stuff more red

As it really really oxidizes a lot it turns stuff brown.

Scientists like to make this sound difficult
so they refer to the proteins involved Myoglobin (purplish-red), Oxymyoglobin (bright red), and Metmyoglobin (brown).
But they just do that to make it sound difficult.

A thing I sometimes wish I did not know.

Rust happens when iron is combusted by contact with oxygen. It’s why when you strike a flint and steel, you get sparks.
