Most states are similar, you will have to check your own and/or the other 49 states. This is for Virginia.
But in general the running totals reported on election night are considered to be “unofficial” because the local precinct, county election board, and state election executive authority have not completed post election day counting and post election day qualify checks required for certification.
In the image above you can see the big red arrow pointing out election night results are unofficial. The become official (orange highlighted text) only when the election board certifies them.
